Chocolate Brownies

Hi Everyone!
This week I have made some chocolate brownies! These are seriously rich, chocolaty brownies that make an ideal dessert rather than a cake. They are perfect for a dinner party or for a weekend treat!

INGREDIENTS:
250g Unsalted Butter
200g Dark Chocolate
75g Dried Sour Cherries
50g Chopped Mixed Nuts
80g Cocoa Powder
65g Plain Flour, sifted
1 tsp Baking Powder
360g Caster Sugar
4 Large Eggs

METHOD:
1. Pre heat oven to 180C/ 350F/ Gas Mark 4 and line a 25cm square baking tin.
2. In a large bowl over some simmering water melt the butter and chocolate together until smooth and then add the cherries and nuts and stir together. (You can miss out the cherries and buts if you prefer or are allergic).
3. In a separate bowl mix the flour, cocoa powder, baking powder and sugar together then add this to the chocolate mixture and stir together well.
4. Beat the eggs together then add this to the main mixture and mix until you have a silky consistency.
5. Pour the mixture into your baking tray and place in the oven for around 25 minutes. The brownies should be springy to touch on the outside but still gooey in the middle.
6. Allow the cake to cool in the tray then transfer it to a chopping board and cut into chunky squares.

This recipe is pretty simple to make and very decedent. You may feel that the brownies need more than 25 minutes in the oven due to the mixture seeming a little runny inside but this will solidify after cooling. I served the brownies with raspberries and cream.
