Celebration Cake


Hi Everyone!
I thought that I would share this celebration cake with you all! I made it for my grandma's birthday and everyone really enjoyed it! It a simple cake but is so tasty and makes an ideal birthday cake. It was a case of making up as I went along to be honest but it worked out pretty well! It is a classic Victoria Sandwich cake with a lemon curd filling and a white chocolate cheesecake topping. Here's how I did it!
INGREDIENTS:
For the Sponge
225g/ 8oz Butter at room temperature
225g/ 8oz Self Raising Flour
225g/ 8oz Caster Sugar
4 Eggs
2 tsp Vanilla Extract
2 tbsp Milk
For the Filling
3 tbsp Lemon Curd
For the Topping:
200g Cream Cheese
175g White Chocolate
100g Butter
A topping of your choice - I used Morrisons Strawberry Curls

METHOD
1. Pre heat oven to 180C/ 350F/ Gas Mark 4 and line or grease 2 sponge tins.
2. Whisk the butter and sugar together in a large bowl until light and fluffy then add one egg at a time until all four have been fully incorporated then add the vanilla extract.
3. Now fold in half of the flour followed by the milk and then the remaining flour.
4. Separate the mixture into the 2 tins and bake for 20-25 minutes until golden in colour and springy to the touch.
5. Remove the cakes from the oven and allow to cool in their tins for around 5 minutes before transferring to a wire rack to cool fully.
6. When the cakes have cooled sandwich them together using the lemon curd or you could use jam if you prefer.
7. To make the topping melt the chocolate in a bowl over some simmering water and then allow to cool until lukewarm.
8. In a large bowl beat the cream cheese until it is light and fluffy then add the white chocolate and butter to this and beat until the mixture has the consistency of whipped cream.
9. Finally spread the topping over the cake and top with a decoration of your choice.

This is a great cake to make if you are in a rush and is much nicer than the regular store bought ones in my opinion! It's also great to have a change from the usual icing topped celebration cakes!
